In spring 2011, Pontus Johansson, without a doubt Sweden’s foremost sushi chef with, among other awards, a second place at the international Sushi Awards to his name, opened a new restaurant at Sankt Knuts Torg in Malmö. Saiko is Japanese for ’innovation’, something that has always been an important element in Pontus’ cooking. By uniting authentic food culture from Skåne with traditional Japanese sushi customs, he has succeeded in creating something that is innovative, but without altering the original technique. The menu includes both sushi and hot dishes and the tastefully decorated restaurant has space for both small and large groups of people. The floor, on which the guests both walk and sit, consists of Kährs’ Oak Charlemagne boards. It is a dark, nature oiled 1-strip board with bevelled edges, which creates a solid base for the stylistically pure furnishings.
